  • 1 pound ground turkey
  • 1/2 cup low sodium soy sauce
  • 1/4 cup water
  • 2 tablespoons red apple vinegar
  • 1 tablespoon brown sugar
  • 1 tablespoon granulated sugar
  • 2 teaspoons minced garlic
  • 1 teaspoon ground ginger
  • 1 tablespoon cornstarch
  • 2 tablespoons warm water
  • 1 tablespoon vegetable oil
  • 1 cup finely chopped broccoli
  • 2 large carrots, peeled and grated
  • 1/2 cup diced onion
  • 8 large lettuce leaves (Romaine, Iceberg or Butter Lettuce)
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Prepare the teriyaki sauce by mixing soy sauce, water, vinegar, sugars, garlic, and ginger in a saucepan over medium heat until dissolved.
  2. Thicken the sauce by whisking cornstarch mixed with warm water into the simmering sauce until it thickens.
  3. In a skillet, heat vegetable oil over medium-high heat; cook onions until soft. Add ground turkey and garlic; cook until no longer pink.
  4. Stir in grated carrots and chopped broccoli halfway through cooking.
  5. Pour the teriyaki sauce over the turkey mixture; simmer for five minutes.
  6. Serve spoonfuls of the mixture in lettuce leaves.
