  • 3 cups chicken broth
  • 1 green or red bell pepper, diced
  • 2 celery stalks, diced
  • 1 small onion, finely diced
  • 2 garlic cloves, minced
  • 1 tablespoon olive oil
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 0.5 teaspoon black pepper

Instructions

  1. In a large skillet over medium heat, warm olive oil. Add ground beef and brown for 5–7 minutes. Drain excess fat.
  2. Stir in onion, bell pepper, celery, and garlic; sauté for another 4–6 minutes until softened.
  3. Mix in uncooked rice and toast for 1–2 minutes.
  4. Season with Cajun seasoning, smoked paprika, thyme, and black pepper; stir well.
  5. Pour in chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 18–20 minutes without lifting the lid.
  6. Remove from heat; let sit covered for an additional 5 minutes before fluffing with a fork.
