  • 1 medium green bell pepper
  • 2 small yellow onions
  • 2 cups Bisquick
  • ½ cup sour cream
  • ½ cup mayonnaise
  • 8 ounces shredded cheddar cheese
  • 14 ounces canned diced tomatoes
  • 14 ounces canned corn

Instructions

  1. Preheat oven to 350°F and spray a 9×13-inch casserole dish with non-stick spray.
  2. In a large skillet over medium-high heat, cook the ground beef until browned. Drain grease and add diced onions, bell peppers, taco seasoning, and water; let simmer for 10 minutes.
  3. In a bowl, mix Bisquick and water to form a loose dough. Spread into the casserole dish and bake for 5 minutes.
  4. Layer the cooked beef mixture on the biscuit base followed by the drained tomatoes and corn.
  5. In another bowl, combine sour cream, mayonnaise, half the cheese, green chilies, and black pepper; spread over the beef layer and top with remaining cheese.
  6. Bake uncovered for 30 minutes until bubbly and golden brown. Let sit for 7-10 minutes before serving.
