  • 2 cups sharp cheddar cheese
  • 1 cup sour cream
  • 1 cup whole milk
  • 1/4 cup unsalted butter
  • 3 cloves garlic
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon smoked paprika
  • Salt and freshly ground black pepper
  • 1 cup panko breadcrumbs

Instructions

  1. Preheat oven to 190°C (375°F).
  2. In a large mixing bowl, toss sliced potatoes with salt and pepper.
  3. Sauté chopped onion in butter until translucent; add garlic.
  4. Whisk together sour cream, milk, melted butter, herbs, salt, and pepper.
  5. Layer half of the potatoes in a greased baking dish; top with half of the onion mixture and cheese. Repeat layers.
  6. Pour creamy sauce over layers and sprinkle with panko mixed with olive oil.
  7. Cover with foil; bake for 45 minutes. Remove foil and bake for an additional 20 minutes until golden brown.
