  • 4 tbsp flour (or cornflour for gluten-free)
  • 2 1/2 tbsp parmesan cheese
  • 2 tbsp unsalted butter
  • 2/3 cup dry white vinegar
  • 2 tbsp fresh lemon juice
  • 3 tbsp capers
  • Fresh parsley for garnish

  1. Cut chicken breasts into three pieces and pound to about 0.5cm thickness.
  2. Season with olive oil, salt, and pepper.
  3. Coat in a mixture of flour, parmesan, salt, and pepper.
  4. Heat olive oil in a skillet, cook chicken until golden brown on both sides.
  5. Prepare the sauce by deglazing the skillet with vinegar and lemon juice; add butter, capers, and parsley.
  6. Serve chicken topped with sauce and garnished with parsley.
