  • ¾ cup fresh orange juice
  • 23 tablespoons honey
  • 1 tablespoon rice vinegar
  • 3 tablespoons low sodium soy sauce
  • 2 cups cooked rice
  • 2 cups steamed broccoli

Instructions

  1. In a medium bowl, whisk together the orange juice, honey, rice vinegar, soy sauce, and orange zest. Add salmon cubes to marinate for 15 minutes.
  2. Heat oil in a skillet over medium/low heat. Sauté garlic and ginger until fragrant.

  4. Pour the reserved marinade into a small saucepan, thicken with cornstarch mixed with water, then add to skillet with salmon to simmer.
