  • 6 medium carrots
  • 2 tablespoons extra virgin olive oil
  • ½ teaspoon kosher salt
  • 2 teaspoons minced garlic
  • ½ teaspoon onion powder
  • ½ teaspoon red pepper flakes
  • 1 teaspoon fresh rosemary
  • 2 cups grated parmesan cheese
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Cut the carrots into 2-inch sections and slice each section in half lengthwise.
  3. In a bowl, mix olive oil, salt, garlic, onion powder, red pepper flakes, and rosemary.
  4. Toss the carrot pieces in the seasoning mixture until evenly coated.
  5. Spread 1½ cups of parmesan cheese on the parchment paper.
  6. Arrange the carrots cut side down on the cheese layer and sprinkle remaining parmesan on top.
  7. Bake for 30-35 minutes until tender and crispy.
  8. Serve warm, garnished with parsley.
