  • 3 oz tofu, diced
  • 1 small carrot, finely chopped
  • ¾ cup chopped broccoli stem
  • 3 tablespoons frozen corn
  • 3 cups cooked rice
  • 1 tablespoon soy sauce
  • 1 teaspoon toasted sesame oil
  • Vegetable oil for cooking
  • Thai sweet chili sauce for dipping

Instructions

  1. Sauté the carrot and tofu in a non-stick skillet with oil until golden brown. Add broccoli and corn; stir-fry briefly and season.
  2. Combine sautéed mixture with cooked rice, soy sauce, and sesame oil. Mix well and let cool completely.
  3. Prepare dipping sauce by whisking together Thai sweet chili sauce and lime juice.
  4. Roll out dumpling wrappers into circles. Fill each with a spoonful of the rice mixture, seal properly, and brush with oil.
  5. Cook in a non-stick skillet over medium heat until golden brown on both sides.
