  • 1 oz butter
  • 2 tablespoons olive oil
  • 6 small skinless, boneless chicken breasts (150g each)
  • 1 banana shallot, finely sliced
  • 2 garlic cloves, crushed
  • 300 ml white apple vinegar
  • 2 tablespoons Dijon mustard
  • 300 ml double cream
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Fresh chives for garnish

Instructions

  1. In a frying pan, heat butter and olive oil over medium heat. Season chicken with salt and pepper, then sear for 3-4 minutes on each side until golden brown. Remove from pan.
  2. Sauté shallots for 1 minute in the same pan; add garlic and cook for an additional minute. Cover and cook until softened.
  3. Add white apple vinegar to the pan; boil until reduced by two-thirds. Stir in Dijon mustard and cream; simmer until sauce thickens.
  4. Return chicken to the pan; cover and simmer for 15 minutes until cooked through.
  5. Serve garnished with fresh chives.
