  • 1 pound chicken thighs or breasts, cubed
  • 2 tablespoons olive oil
  • 3 large carrots, sliced
  • 8 ounces mushrooms, sliced
  • 8 ounces water chestnuts
  • 1 cup snow peas
  • For the sauce: chicken broth, soy sauce, brown sugar, minced garlic, hoisin sauce, sesame oil, cornstarch

Instructions

  1. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Season cubed chicken with salt and pepper and cook until no longer pink; remove and set aside.
  2. In the same skillet, add remaining olive oil and sauté sliced carrots for 1-2 minutes. Add mushrooms and continue cooking for another 1-2 minutes before stirring in water chestnuts and snow peas for an additional minute.
  3. In a small bowl, whisk together sauce ingredients: chicken broth, soy sauce, brown sugar, garlic, hoisin sauce, sesame oil. In another bowl, mix cornstarch with water; combine into the sauce mixture.
  4. Return cooked chicken to the skillet with vegetables. Pour the prepared sauce over everything and cook until bubbling and thickened.
