  • 1 small pineapple (peeled, cored, diced)
  • 2/3 cup red pepper (finely diced)
  • 1 cup red onion (diced)
  • 1 clove garlic (diced)
  • 1 jalapeño pepper (diced)
  • Juice of 1/2 lime
  • 1 teaspoon sea salt
  • Optional: 1/4 cup whey (for fermentation)
  • Optional: 1/2 cup chopped cilantro

Instructions

  1. Peel and core the pineapple; dice it into small pieces and place in a mixing bowl.
  2. Add finely diced red pepper, red onion, garlic, and jalapeño to the bowl.
  3. Pour lime juice over the mixture and sprinkle with sea salt; stir well.
  4. If using cilantro, add it on top before serving.
  5. For optional fermentation: Transfer to jars leaving headspace; add whey or salt as instructed; press ingredients down to submerge in juice.
  6. Cover loosely and let sit at room temperature for 3-4 days before enjoying.
