  • 207g sugar
  • 1 large egg
  • 2 tsp vanilla extract
  • 340g cream cheese, room temperature
  • 201g powdered sugar
  • 1 1/2 tsp vanilla extract
  • Assorted chopped fresh fruit for garnish

Instructions

  1. Preheat the oven to 175°C (350°F) and prepare a non-stick cupcake pan.
  2. In a bowl, mix flour, baking soda, cornstarch, and salt; set aside.
  3. In a mixer bowl, beat butter and sugar until fluffy. Add egg and vanilla extract; mix until combined.
  4. Gradually incorporate dry ingredients into wet mixture to form dough.
  5. Shape dough into cups in the cupcake pan and bake for 7-10 minutes until golden.
