  • 2 tablespoons olive oil
  • 450 g leeks, chopped
  • 900 g fresh spinach, chopped (or frozen)
  • 450 g feta cheese, crumbled
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 450 g phyllo dough
  • 115 g olive oil (for brushing)

Instructions

  1. Preheat your oven to 190°C (375°F).
  2. In a large pot, heat olive oil and sauté leeks until soft. Add chopped spinach and cook until wilted; drain any excess moisture.
  3. Remove from heat and mix in feta cheese, salt, and pepper; adjust seasoning as desired.
  4. Grease a baking dish with olive oil. Layer two-thirds of the phyllo sheets in the dish, brushing each with olive oil.
  5. Spoon in the spinach-feta mixture and level the surface.
  6. Fold phyllo edges over the filling, cover with remaining phyllo sheets, greasing each layer.
  7. Score the top with a knife and sprinkle lightly with water for crispness.
  8. Bake for about 60 minutes or until golden brown. Cool for at least 30 minutes before slicing.
