  • 2 cups fresh pineapple chunks or canned, drained
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium red onion, sliced
  • 1 tablespoon olive oil
  • Salt and black pepper, to taste
  • 1/2 cup pineapple juice, reserved from the can or fresh
  • 1/4 cup soy sauce, low sodium preferred
  • 3 tablespoons honey or brown sugar
  • 1 tablespoon rice vinegar or apple cider vinegar
  • 1 teaspoon sesame oil, optional
  • 3 cloves garlic, minced
  • 1 teaspoon grated ginger, optional
  • 1 tablespoon cornstarch
  • 2 tablespoons water for cornstarch slurry
  • 1 tablespoon sesame seeds for garnish, optional
  • 2 tablespoons chopped green onions for garnish, optional

Instructions

  1. Preheat oven to 400°F (200°C) and line a sheet pan with parchment paper.
  2. In a saucepan, combine pineapple juice, soy sauce, honey, vinegar, garlic, and ginger; heat until simmering.
  3. In the prepared pan, arrange chicken in the center; surround with pineapple and vegetables.
  4. Drizzle olive oil over veggies and season with salt and pepper; brush half the sauce on chicken.
  5. Roast for 25–30 minutes until chicken reaches an internal temperature of 165°F (74°C). Broil for extra caramelization if desired.
  6. Garnish with sesame seeds and green onions before serving.
