  • 2 tablespoons olive oil
  • 1 small carrot, diced (50g)
  • 2 celery stalks, diced (80g)
  • 1 small onion, diced (70g)
  • 2 garlic cloves, minced
  • 14 oz canned chopped tomatoes (400g)
  • 2 cups cherry tomatoes (300g)
  • 5 cups chicken broth (1.2 litre)
  • ¼ cup fresh basil leaves, chopped (12g)
  • Salt to taste
  • Pepper to taste
  • 2 tablespoons fresh parsley, finely chopped (for garnish)

Instructions

  1. In a large pan, heat olive oil over medium heat. Sauté diced carrot, celery, and onion for 3-4 minutes until softened; add minced garlic and cook for an additional minute.
  2. Stir in canned tomatoes, cherry tomatoes, chicken broth, salt, and pepper; bring to a boil then reduce heat to simmer partially covered for 10-15 minutes.
  3. Add chopped basil and blend the soup until smooth using a blender. Adjust seasoning as necessary.
  4. For garnish, blitz fresh basil leaves with olive oil and a pinch of salt; drizzle over the soup before serving.
