  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup buttermilk
  • 2 large eggs
  • Zest and juice of 3 lemons (2 for muffins, 1 for glaze)
  • For the cream cheese filling: 8 ounces cream cheese, softened

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, mix melted butter, buttermilk, eggs, vanilla extract, lemon zest, and lemon juice until well combined.
  4. Pour wet ingredients into dry ingredients and stir gently until just mixed.
  5. In a separate bowl, blend cream cheese with sugar and vanilla extract until smooth.
  6. Fill muffin liners halfway with batter, add a spoonful of cream cheese mixture in the center, then cover with more batter until each liner is about 3/4 full.
  7. Bake for 18-22 minutes or until a toothpick inserted comes out clean.
  8. Cool muffins in the tin for about 5 minutes before transferring them to a wire rack to cool completely.
  9. Mix powdered sugar with lemon juice and zest for the glaze; drizzle over cooled muffins.
