  • 40 g granulated sugar
  • 135 mL water
  • 180 g all-purpose flour
  • 1 tablespoon matcha powder
  • 115 g unsalted butter
  • 1 large egg
  • 100 g white chocolate

Instructions

  1. Prepare the mochi by mixing glutinous rice flour, sugar, and water in a microwave-safe bowl. Microwave for three minutes total—stirring after each minute—until sticky.
  2. Let the mochi cool slightly before dividing it into ten pieces, dusting with cornstarch to prevent sticking.
  3. In a separate bowl, whisk together all-purpose flour, matcha powder, baking soda, salt, and baking powder.
  4. Cream softened butter and granulated sugar until fluffy. Mix in egg and vanilla extract until combined.
  5. Gradually add the dry mixture to the butter mixture until just combined; fold in most of the chopped white chocolate.
  6. Chill dough balls on a lined baking sheet for at least one hour.
  7. Preheat oven to 180°C (350°F). Fill chilled dough balls with mochi, reshaping them into balls.
  8. Bake for 12-14 minutes until edges are set; let cool on a wire rack.
