  • 150 g digestive biscuits
  • 75 g unsalted butter (melted)
  • 250 ml cold double cream
  • 350 g cream cheese (room temperature)
  • 120 g icing sugar
  • 1 tsp cinnamon
  • For topping: 2 tbsp granulated sugar
  • 20 g softened unsalted butter
  • 60 g cream cheese (room temperature)
  • 25 g icing sugar

Instructions

  1. Prepare the base by crushing digestive biscuits and mixing with melted butter. Press into cupcake liners and chill.
  2. For the filling, whip cold double cream to stiff peaks. Beat cream cheese, icing sugar, and cinnamon until smooth, then fold in whipped cream. Spoon or pipe onto chilled bases.
  3. Create the topping by mixing granulated sugar with cinnamon and sprinkling over cheesecakes.
  4. Make the frosting by beating together softened butter, cream cheese, and remaining icing sugar until smooth. Pipe decorative swirls on top.
  5. Chill for at least 4 hours before serving.
