  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup grated carrots
  • 1/2 cup crushed pineapple (drained)
  • 1/2 cup shredded coconut (unsweetened)
  • Optional: 1/2 cup raisins or chopped walnuts

Instructions

  1. Preheat the oven to 375°F (190°C). Line a muffin tin with liners or grease lightly.
  2. In a large bowl, whisk together flour, sugar, baking soda, baking powder, salt, and cinnamon.
  3. In another bowl, mix vegetable oil, eggs, and vanilla until smooth.
  4. Stir grated carrots, crushed pineapple, and shredded coconut into the wet mixture.
  5. Combine wet and dry ingredients; fold in optional add-ins gently until just mixed.
  6. Fill muffin cups about 2/3 full and bake for 18-20 minutes until a toothpick comes out clean.
  7. Let cool in the pan for five minutes before transferring to a wire rack.
