  • 1 onion, finely chopped
  • 450g (16 oz) mushrooms, finely chopped
  • 1 tablespoon mayonnaise
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 garlic clove, minced
  • 120g (1/2 cup) grated Parmesan cheese
  • 120180g (1-1 1/2 cups) shredded mozzarella cheese
  • 1 package puff pastry (2 sheets)
  • 1 egg, beaten for egg wash
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Sauté finely chopped onion until translucent, about 3-4 minutes.
  2. Add chopped mushrooms and cook until moisture is released, approximately 5-7 minutes. Stir in mayonnaise, salt, pepper, garlic, and Parmesan until combined.
  3. Roll out puff pastry sheets and evenly spread the mushroom mixture on each sheet. Sprinkle mozzarella cheese on top.
  4. Roll the pastry sheets tightly into logs and slice into 1-inch thick pinwheels.
  5. Place pinwheels on a parchment-lined baking sheet, brush with beaten egg, and bake at 185°C (365°F) for 30-40 minutes until golden brown.
