  • 56 medium sweet potatoes
  • 1/4 cup unsalted butter
  • 1/4 cup brown sugar
  • 1/2 cup water
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cloves
  • 1 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/4 cup chopped pecans or walnuts
  • 1/2 cup mini marshmallows
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and slice sweet potatoes into thin medallions. Layer them in a baking dish.
  3. In a saucepan, melt butter with brown sugar, water, cinnamon, cloves, nutmeg, and salt over medium heat.
  4. Brush about three-quarters of the sauce over the sweet potatoes and cover with foil.
  5. Bake for 45-50 minutes until tender.
  6. Remove from the oven, add remaining sauce, sprinkle with pecans and marshmallows.
  7. Broil for 1-2 minutes until marshmallows are golden.
