  • 1 red bell pepper (sliced)

  • 1 tablespoon fresh ginger (grated)
  • 1/2 cup soy sauce
  • 1/2 cup packed brown sugar
  • 1/4 cup ketchup
  • 1/4 cup apple cider vinegar
  • 1 tablespoon sesame oil

Instructions

  1. Season chicken thighs with salt and pepper. Place them evenly at the bottom of the slow cooker.
  2. In a bowl, whisk soy sauce, brown sugar, ketchup, apple cider vinegar, garlic, ginger, and sesame oil until well combined.
  3. Layer sliced onions and bell peppers over the chicken, followed by the pineapple chunks.
  4. Pour the prepared sauce evenly over the top.
  5. Cover and cook on low for 6-7 hours or high for 3-4 hours until chicken is tender.
