  • 1 lb cavatappi pasta
  • 1 lb mozzarella cheese, shredded
  • 1 lb colby jack cheese, shredded
  • 1/2 lb sharp cheddar cheese, shredded
  • 3 tbsp unsalted butter
  • 3 tbsp all-purpose flour
  • 12 oz evaporated milk (1 can)
  • 2 cups heavy cream
  • 1 tbsp Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Boil salted water in a large pot. Cook cavatappi until al dente; drain and set aside.
  2. In a saucepan over medium heat, melt butter. Whisk in flour for 1-2 minutes until bubbly.
  3. Gradually add evaporated milk and heavy cream while whisking to create a smooth sauce.
  4. Stir in Dijon mustard, salt, pepper, garlic powder, and smoked paprika; let simmer until thickened.
  5. Add shredded cheeses to the sauce, stirring until melted and smooth.
  6. Combine cooked pasta with the cheese sauce; mix well.
  7. Transfer into a greased casserole dish and top with additional cheese if desired.
  8. Bake at 350°F (175°C) for 25-30 minutes until bubbly and golden brown.
