  • 24 ounces full-fat cottage cheese
  • 1 cup heavy whipping cream
  • 1/3 cup honey
  • 20 ounces canned crushed pineapple
  • 1 ounce freeze-dried strawberries
  • 3 cups frozen raspberries
  • 5 teaspoons unflavored Vegan Gelatin powder

Instructions

  1. Strain crushed pineapple, reserving juice. Mix with honey and cottage cheese in a bowl.
  2. Dissolve Vegan Gelatin in reserved pineapple juice by heating in the microwave.
  3. Combine dissolved gelatin with cottage cheese mixture until smooth.
  4. Process freeze-dried strawberries into powder and mix into the salad.
  5. Whip heavy cream until stiff peaks form; fold into the cottage cheese mixture.
  6. Stir in frozen raspberries, transfer to serving dish, and chill for 1-2 hours before serving.
