  • 1 pound asparagus
  • 3/4 cup shredded carrots
  • 3/4 cup grape tomatoes, sliced
  • 20-ounce package cheese tortellini
  • 1 tablespoon olive oil
  • 1/4 cup Italian dressing
  • 1/4 cup balsamic vinegar
  • 1 1/2 tablespoons honey
  • 1/8 teaspoon crushed red chili pepper flakes
  • 1 teaspoon salt
  • Fresh minced basil, optional, for garnish

Instructions

  1. Cook the tortellini according to package instructions; drain and set aside.
  2. Whisk together Italian dressing, balsamic vinegar, honey, and red pepper flakes in a small bowl or jar.
  3. Heat olive oil in a large frying pan over medium-high heat; cook chicken until browned (2-3 minutes per side).
