Step-by-Step Instructions
  1. In a large bowl, combine the jerk seasoning, soy sauce, honey, olive oil, lime juice, garlic, and chopped onion. Whisk until well blended.
  2. Add the skinless chicken thighs, ensuring they are completely coated in the marinade. Cover the bowl and refrigerate for at least 15 minutes, or overnight for enhanced flavor.
  3. Preheat your oven to 400°F (200°C).
  4. Lightly grease a large baking dish and arrange the marinated chicken thighs in the dish. Pour any remaining marinade over the chicken.
  5. Carefully distribute pineapple chunks around the chicken in the baking dish.
  6. Cover the baking dish with aluminum foil and bake for 25 minutes. Remove foil and continue baking for an additional 20-25 minutes until the chicken reaches 165°F.
  7. Optionally broil for an additional 2-3 minutes for a crispy finish.
