- Preheat your oven to 400°F (204°C).
- Slice the chicken breasts horizontally into 4 fillets and season them with salt, pepper, and garlic.
- Blend cream cheese and heavy cream in a mixing bowl until smooth, then mix in garlic, onion powder, paprika, Italian seasoning, salt, and pepper.
- Spread half of the creamy sauce in a greased baking dish, lay the chicken fillets over it, and drizzle the remaining sauce on top followed by scattering sun-dried tomatoes.
- Cover the dish with foil and bake for 20 minutes.
- Remove the foil, stir in spinach, sprinkle with remaining mozzarella, and bake uncovered for another 10 minutes.
- Let it rest for a few minutes before serving.
