  • 4 pieces High-Quality Buns or Kaiser Rolls
For the Smashed Avocado

For the Coleslaw

  • 2 tablespoons Apple Cider Vinegar Works well with other seasonings.

  • 1 medium Homemade Pickled Onions Store-bought pickles can be used instead.

Method
 

Pickled Onions
  1. Slice the onion and combine with vinegar, water, sugar, and salt. Let sit for at least 30 minutes.
Coleslaw
  1. In a bowl, whisk the mayo, vinegar, salt, pepper, sugar, and mustard. Add coleslaw mix and chill for 20 minutes.
Cook Tofu
  1. Shred tofu, fry in oil until golden brown. Add BBQ sauce and cook until thickened.
Toast Buns
  1. Preheat oven to 350°F. Toast buns for 5-7 minutes until golden.
Assemble Sandwiches
  1. Spread smashed avocado on buns, add BBQ tofu, coleslaw, and pickled onions. Top with the bun.
