- In a large mixing bowl, add plain Greek yogurt, honey (or maple syrup), and vanilla extract. Stir until smooth, about 2 minutes.
- Add rolled oats, chia seeds (or ground flaxseed), and whey protein powder to the bowl. Fold gently until well incorporated, about 1-2 minutes.
- Fold in fresh blueberries gently until evenly dispersed.
- Prepare a parchment-lined baking sheet. Scoop the mixture into tablespoon-sized portions and place on the sheet.
- Transfer to the freezer and allow to freeze for at least 1 hour or refrigerate for 2-3 hours until firm.
- Once firm, remove from the baking sheet and store in a sealed container.
