  • 2 tablespoons honey Provides natural sweetness; maple syrup can be used
  • 2 tablespoons chia seeds Adds fiber and omega-3 fatty acids; ground flaxseed can be used
  • 1 scoop whey protein powder Optional; boosts protein content
  • 1 teaspoon vanilla extract Enhances flavor
  • pinch salt Balances sweetness

Method
 

Instructions
  1. In a large mixing bowl, add plain Greek yogurt, honey (or maple syrup), and vanilla extract. Stir until smooth, about 2 minutes.
  2. Add rolled oats, chia seeds (or ground flaxseed), and whey protein powder to the bowl. Fold gently until well incorporated, about 1-2 minutes.
  3. Fold in fresh blueberries gently until evenly dispersed.
  4. Prepare a parchment-lined baking sheet. Scoop the mixture into tablespoon-sized portions and place on the sheet.
  5. Transfer to the freezer and allow to freeze for at least 1 hour or refrigerate for 2-3 hours until firm.
  6. Once firm, remove from the baking sheet and store in a sealed container.
