Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C). Prepare your baking sheets by greasing them lightly or lining them with parchment paper.
  2. Arrange the Tostitos Scoops tortilla chips bowl-side up on the prepared baking sheets, ensuring even spacing.
  3. In a large mixing bowl, beat the softened cream cheese until smooth, then add the large egg and mix until fully incorporated.
  4. Stir in the mozzarella cheese, drained sweet corn, and green chiles, along with garlic powder, salt, and black pepper. Mix until well combined.
  5. Fill each tortilla chip with about 1 tablespoon of the cheesy filling, sprinkle reserved mozzarella and Parmesan cheese on top.
  6. Bake for 13-15 minutes or until the tops are golden brown and bubbly.
  7. Let the bites cool for a minute before serving them warm on a platter.
