Step-by-Step Instructions for Refreshing Watermelon Mint Mojito Mocktail
  1. Cut the seedless watermelon into chunks, using about 2 cups. Blend on high for 10-15 seconds until smooth. Strain through a fine-mesh sieve to yield approximately 1 cup of fresh watermelon juice.
  2. In a tall glass or cocktail shaker, add six fresh mint leaves, freshly squeezed lime juice, and simple syrup. Muddle gently for about 20 seconds to release mint oils.
  3. Pour about 3 ounces of the freshly prepared watermelon juice into the glass with the muddled mint mixture. Stir gently to combine.
  4. Fill the glass two-thirds full with ice.
  5. Pour 1 cup of sparkling water or club soda over the ice, stirring gently to combine.
