Fajita Seasoning
  • 1 tbsp Chili Powder
  • 1 tbsp Cumin
  • 1 tbsp Smoked Paprika
  • 1 tsp Sugar
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 0.5 tsp Cayenne Pepper For heat
  • 1 tsp Kosher Salt
  • 0.5 tsp Black Pepper
Bowl Ingredients
  • 2 tbsp Olive Oil For sautéing
  • 2 pcs Poblano Peppers Substitution: Extra bell peppers or jalapeño
  • 1 cup Bell Peppers (Red & Orange) Substitution: Any color bell pepper
  • 1 cup Red Onion Substitution: Yellow onion or green onions
  • 4 cups Romaine Lettuce Substitution: Any leafy greens
  • 2 cups Cilantro Lime Rice Substitution: Use brown rice for added nutrition
  • 1 cup Chipotle Black Beans Substitution: Pinto beans or refried beans
  • 1 cup Corn Salsa Use fresh or thawed frozen corn
  • 1 cup Guacamole Substitution: Avocado slices
  • 1 cup Tortilla Chips Optional for crunch

Method
 

Preparation
  1. In a small bowl, combine chili powder, cumin, smoked paprika, sugar, garlic powder, onion powder, cayenne pepper, kosher salt, and black pepper.
  2. Heat olive oil in a large skillet over medium heat and add chopped poblano peppers, red and orange bell peppers, and red onion.
  3. Sauté the mixture for about 8 minutes until the vegetables are tender and slightly golden.
  4. Sprinkle the homemade fajita seasoning over the sautéed vegetables and mix well.
  5. Prepare the cilantro lime rice according to package instructions.
  6. Fluff the rice and mix in chopped cilantro and lime juice.
  7. Layer your burrito bowl starting with lettuce, followed by rice, chipotle black beans, sautéed vegetables, and corn salsa.
  8. Top with guacamole and crushed tortilla chips if desired.
