- Preheat your oven to 350°F (175°C) and grease a mini muffin tin.
- Blend 1 ripe banana, 1 cup of cottage cheese, 2 eggs, 1 cup of oats, 1 teaspoon of baking powder, 1 teaspoon of vanilla extract, 1 teaspoon of cinnamon, and a pinch of salt until smooth.
- If desired, fold in mini chocolate chips or nuts into the batter.
- Pour the batter into the prepared mini muffin tin, filling each cup about ¾ full.
- Bake for 11-16 minutes, or until golden brown and firm to the touch.
- Allow to cool in the muffin tin for 5 minutes before removing.
- Serve warm or cool completely before storing.
