  • 1 teaspoon Baking Powder ensure freshness
  • 1 teaspoon Cinnamon adjust to taste
  • a pinch Salt optional

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a mini muffin tin.
  2. Blend 1 ripe banana, 1 cup of cottage cheese, 2 eggs, 1 cup of oats, 1 teaspoon of baking powder, 1 teaspoon of vanilla extract, 1 teaspoon of cinnamon, and a pinch of salt until smooth.
  3. If desired, fold in mini chocolate chips or nuts into the batter.
  4. Pour the batter into the prepared mini muffin tin, filling each cup about ¾ full.
  5. Bake for 11-16 minutes, or until golden brown and firm to the touch.
  6. Allow to cool in the muffin tin for 5 minutes before removing.
  7. Serve warm or cool completely before storing.
