- Preheat your oven to 350°F (175°C) and spritz a 9 x 13-inch baking dish with nonstick spray.
- In a large skillet over medium-high heat, brown the lean ground beef for 5-7 minutes. Add diced yellow onions and cook for an additional 3-4 minutes.
- Stir in the salt, pepper, and onion soup mix, mixing thoroughly and then remove from heat.
- Spread the uncooked instant rice evenly in the baking dish, then layer the beef and onion mixture over it. Pour the beef broth on top.
- Cover the baking dish with aluminum foil and bake for 40 minutes.
- After baking, uncover and add the sour cream, mozzarella cheese, and crispy fried onions.
- Return to the oven and bake uncovered for an additional 10-15 minutes until cheese is melted and bubbly.
- Let the casserole rest for a few minutes before serving. Garnish with chopped parsley if desired.
