  • 2 cloves garlic
  • 8 leaves fresh sage Substitution: use half the amount of dried sage
  • 1/2 cup Parmesan cheese Substitution: nutritional yeast or Pecorino Romano
  • 1/4 tsp nutmeg Optional
  • 1/4 tsp cinnamon Optional

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the small sugar pumpkins and scoop out the insides. Season with salt and pepper.
  3. In a skillet, melt unsalted butter over medium heat to create brown butter. Sauté diced onion and minced garlic until translucent, about 2-3 minutes. Add ground turkey, season, and cook until browned, about 5-7 minutes.
  4. Remove from heat and stir in fresh sage and grated Parmesan cheese. Adjust seasoning as needed.
  5. Stuff the prepared pumpkins with the filling, packing it gently.
  6. Place pumpkins in a baking dish with water in the bottom. Cover with aluminum foil and bake for 30-40 minutes until tender.
