Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C) and wash and dry the sweet potatoes. Poke holes in each potato.
  2. Bake the sweet potatoes for 45 to 55 minutes until soft and caramelized. Let cool for a few minutes.
  3. In a skillet, melt butter over medium heat and sauté diced apples for 5 to 7 minutes.
  4. Add maple syrup, cinnamon, nutmeg, cloves, and salt to the skillet, bubbling for about 2 minutes.
  5. Slice the cooled sweet potatoes open lengthwise and fluff the insides with a fork.
  6. Spoon the apple filling into each sweet potato, making sure it's generously filled.
  7. Sprinkle with pecans and cranberries, and add Greek yogurt or whipped cream. Serve warm.
