Step-by-Step Instructions for Dill Pierogi Soup
  1. Heat 2 tablespoons of olive oil in a large pot over medium heat. Add 1 diced medium onion and sauté for about 5 minutes until it becomes translucent and fragrant. Stir in 2 minced garlic cloves and continue cooking for 1 additional minute.
  2. Pour in 4 cups of vegetable broth and add 2 medium diced potatoes along with 1 cup of sliced carrots. Bring the mixture to a rolling boil, then reduce to a simmer. Cook for 10-15 minutes, until the potatoes and carrots are tender, stirring occasionally.
  3. Stir in 1 cup of frozen pierogi into the simmering soup, allowing them to heat through for about 5-7 minutes until they are plump and softened.
  4. Mix in 1 cup of chopped fresh dill, 1 teaspoon of salt and 1/2 teaspoon of black pepper. Adjust seasoning to taste and serve hot, optionally with a dollop of sour cream.
