Preparation Steps

  2. Wash the mini sweet peppers under cold water, halve them lengthwise, and remove the seeds and membranes.
  3. In a medium bowl, mix together cream cheese, shredded cheddar, garlic powder, onion powder, smoked paprika, salt, and black pepper until smooth.
  4. Optional: Fold in cooked bacon and chopped green onions into the cream cheese mixture.
  5. Fill each halved pepper with the cream cheese mixture, packing it in well.
  6. Sprinkle the filled peppers with panko breadcrumbs for added crunch.
  7. Lightly drizzle or spray the filled peppers with olive oil.
  8. Bake in the oven for 15-18 minutes until the peppers are tender and the tops are golden brown.
