  • 2 tablespoons Olive Oil Any neutral oil, like avocado oil, can be used instead.
For the Roasted Tomatoes
  • 2 pints Cherry Tomatoes Enhances flavor when roasted; grape tomatoes work as an alternative.
  • 1 teaspoon Salt Enhances flavors; adjust according to taste or dietary restrictions.
  • Freshly Ground Black Pepper To taste; use white pepper for a milder flavor.
For Garnish
  • 1 tablespoon Fresh Parsley Chopped; can be replaced with basil or omitted entirely.
  • Parmesan Cheese Optional; omit for a dairy-free version.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Gather your ingredients and a large baking dish.
  2. In your baking dish, combine cherry tomatoes with olive oil and black pepper. Toss gently.
  3. Create a well in the cherry tomato mixture and place the Boursin cheese in that well.
  4. Put your baking dish in the oven and bake for about 30 minutes until tomatoes soften and cheese melts.
  5. Fill a large pot with salted water and bring to a boil. Add dry pasta and cook until al dente, then drain.
  6. Turn on the broiler to high and broil the dish for about 2 minutes for a crispy top.
  7. Remove from the oven, stir in garlic, parsley, and cooked pasta until well combined. Serve hot.
