- Cook the pasta in salted boiling water until al dente, about 8-10 minutes. Drain and cool slightly.
- Preheat oven to 400ºF (200ºC), bake bacon on a lined sheet pan for approx. 25 minutes until crispy. Chop after cooling.
- Whisk together sour cream and ranch dressing in a bowl until smooth. Set aside.
- In a mixing bowl, combine cooled pasta, chopped green onions, grated cheddar, and half of the bacon. Fold to mix.
- Pour dressing over pasta salad, stirring gently to coat each piece evenly.
- Chill the salad in the fridge for at least 30 minutes. Before serving, top with remaining bacon and garnish with parsley.
