Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 6-inch springform pan.
  2. If making a crust, combine graham cracker crumbs, sugar, and salt. Mix in melted butter and press into the pan. Bake for 10-12 minutes.
  3. Blend cottage cheese, Greek yogurt, egg, sugar, flour/cornstarch, vanilla extract, and lemon zest until smooth.
  4. Pour filling over baked crust or directly into greased pan and bake for 30-35 minutes.
  5. Cool at room temperature for about an hour, then refrigerate for several hours or overnight.
  6. Release the cheesecake from the springform pan and top with yogurt, strawberries, or granola before serving.
