  • ½ small White Onion finely chopped
For the Dressing
  • ½ cup Mayonnaise Greek yogurt can be used for a lighter version
  • ½ cup Sour Cream or replace with additional mayonnaise or yogurt
  • 2 tablespoons Fresh Dill or half the amount if using dried

Step-by-Step Instructions
  1. Cook Pasta: Boil salted water, add rotini pasta, and cook for 8-10 minutes until al dente. Drain and rinse under cold water.
  2. Soak in Pickle Juice: Transfer pasta to a mixing bowl, add ⅓ cup dill pickle juice, mix gently, and let sit for 10 minutes.
  3. Chop Ingredients: Chop baby dill pickles, dice Colby Jack cheese, and finely chop white onion.
  4. Drain Excess Juice: After soaking, drain any excess pickle juice from the pasta.
  5. Mix Salad: In the bowl with drained pasta, add chopped pickles, cheese, and onion, and stir gently.
  6. Make Dressing: In a separate bowl, whisk mayonnaise, sour cream, remaining pickle juice, dill, salt, and pepper until smooth.
  7. Combine Everything: Pour dressing over pasta salad mixture and mix carefully.
