Cooking Instructions
  1. Heat 2 tablespoons of olive oil in a large pot over medium heat. Once hot, add 1 pound of ground chicken and cook for about 5-7 minutes, or until browned.
  2. In the same pot, add diced onion and sauté for 3-4 minutes. Stir in 2 minced garlic cloves and cook an additional 1-2 minutes.
  3. Return the chicken to the pot, add 4 cups of chicken broth, and bring to a gentle simmer.
  4. Reduce heat to low, stir in 1 cup of heavy cream and 1 cup of whole milk, and simmer for 5 minutes.
  5. Sprinkle in 1 teaspoon each of dried basil and oregano, along with salt and black pepper to taste, and simmer for another 10-15 minutes.
  6. Stir in 0.5 cup of grated Parmesan cheese and 1 cup of shredded mozzarella cheese until melted.
  7. Add 2 cups of fresh spinach, sliced carrots, and diced celery. Cook for an additional 5-7 minutes until tender.
  8. Taste and adjust seasoning if necessary, then serve immediately.
