Method
 

Step-by-Step Instructions
  1. Preheat the oven to 325°F (163°C) and line a 9x9-inch baking pan with parchment paper.
  2. Combine graham cracker crumbs, melted butter, and sugar until the mixture resembles wet sand. Press into the bottom of the prepared pan. Bake for 10 minutes until golden.
  3. Beat softened cream cheese until smooth. Gradually add sugar, then eggs, vanilla extract, and salt. Mix until combined.
  4. Pour the cream cheese filling over the crust and swirl in strawberry jam if desired.
  5. Bake for 35 to 40 minutes until edges are set and the center is jiggly.
  6. Cool in the oven with the door cracked for 30 minutes.
  7. Refrigerate for at least 4 hours, preferably overnight, to chill.
  8. Use the parchment overhang to lift out of the pan and slice into squares. Serve cold.
