Step-by-Step Instructions

  2. Sauté the Shrimp: Heat olive oil in a skillet over medium heat. Add shrimp in a single layer and cook for 2-3 minutes on each side until pink. Remove shrimp and set aside.
  3. Sauté the Garlic: In the same skillet, reduce heat and add minced garlic, stirring for 1 minute until fragrant.
  4. Make the Creamy Sauce: Pour in heavy cream and simmer gently for 3-5 minutes until thickened.
  5. Add Tomatoes and Spinach: Stir in sun-dried tomatoes and spinach, cooking for 2-3 minutes until spinach wilts.
  6. Combine with Shrimp: Return shrimp to skillet, mix in grated Parmesan cheese until melted.
  7. Mix in the Pasta: Add cooked spinach pasta to the skillet and toss until well coated. Adjust consistency with reserved pasta water if needed.
