- Prepare the Pan and Preheat the Oven: Grease a loaf pan with cooking spray and preheat your oven to 350°F (175°C).
- Mix the Dry Ingredients: In a bowl, whisk together flour, baking soda, and salt until combined. Set aside.
- Combine the Wet Ingredients: In another bowl, mix mashed bananas, brown sugar, granulated sugar, eggs, melted butter, and vanilla until smooth.
- Incorporate the Dry Ingredients: Gradually stir the dry ingredients into the wet mixture until just combined.
- Bake the Bread: Pour batter into the prepared pan and bake for 55-65 minutes, or until a toothpick comes out clean.
- Cool the Bread: Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Prepare the Cream Cheese Frosting: Mix softened cream cheese and confectioners' sugar until smooth.
- Caramelize the Sugar Topping: Spread cream cheese frosting on top of the cooled bread, sprinkle sugar, and caramelize with a blow torch.
