  • 1 pack Taco Seasoning
  • 1 cup Red Enchilada Sauce
For the Tacos
  • 2 cups Oaxaca Cheese or Mexican Cheese Blend or Monterey Jack
  • 12 small Corn Tortillas
  • 2 tbsp Olive Oil or avocado oil

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 450°F (232°C).
  2. In a large skillet over medium heat, brown the ground beef for about 5–7 minutes.
  3. Stir in taco seasoning and red enchilada sauce, simmer for 2–3 minutes.
  4. Warm corn tortillas in the microwave for 30–60 seconds.
  5. Brush one side of each tortilla with olive oil and arrange on a baking sheet.
  6. Spoon cheese and beef mixture onto each tortilla and fold them over.
  7. Bake the assembled tacos for about 16 minutes until crispy.
  8. Let the tacos cool for 3 minutes before serving with salsa or guacamole.
