- Preheat your oven to 425°F (220°C) and prepare a wire rack over a rimmed baking sheet.
- Wash and slice the zucchini into thin rounds, ideally about 1/8" thick. Toss with olive oil until well coated.
- In a separate bowl, combine panko breadcrumbs, grated parmesan cheese, and salt. Mix thoroughly.
- Coat each zucchini slice in the breadcrumb mixture and place them on the prepared wire rack.
- Bake the zucchini chips for 15-20 minutes until golden brown and crisp.
- Let the chips cool for a minute or two before serving. Enjoy fresh, preferably with a dip.
