Method
 

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C) and prepare a wire rack over a rimmed baking sheet.
  2. Wash and slice the zucchini into thin rounds, ideally about 1/8" thick. Toss with olive oil until well coated.
  3. In a separate bowl, combine panko breadcrumbs, grated parmesan cheese, and salt. Mix thoroughly.
  4. Coat each zucchini slice in the breadcrumb mixture and place them on the prepared wire rack.
  5. Bake the zucchini chips for 15-20 minutes until golden brown and crisp.
  6. Let the chips cool for a minute or two before serving. Enjoy fresh, preferably with a dip.
