Step-by-Step Instructions for Baked Zucchini Fries
  1. Preheat your oven to 425°F (220°C). Slice the zucchinis lengthwise, then quarter each slice into fry shapes. Set aside.
  2. In a medium bowl, beat one egg to create your egg wash. In another bowl, combine grated Parmesan cheese, garlic powder, and Italian seasoning.
  3. Dip each zucchini fry into the egg wash and then roll it in the Parmesan mixture. Place on a parchment-lined baking tray.
  4. Bake for 25-30 minutes, flipping halfway through until golden brown and crispy.
  5. While fries are baking, mix mayonnaise, lemon juice, minced garlic, chopped parsley, salt, and pepper until well-blended for the aioli.
