- Trim and cut the chicken tenders into bite-sized pieces. Rinse and pat them dry.
- Combine buttermilk, garlic powder, onion powder, smoked paprika, salt, and black pepper in a bowl, then marinate chicken pieces for at least 15 minutes, ideally 2 hours.
- Prepare a breading station with flour, whisked eggs, and panko breadcrumbs. Bread each chicken piece in this order: flour, egg, and panko.
- Heat avocado oil in a skillet to 350°F. Fry the breaded chicken for 3-4 minutes per side until golden brown and crispy.
- Mix mayonnaise, sweet chili sauce, sriracha, optional honey, and rice vinegar for the sauce. Coat the fried chicken bites in the sauce or drizzle on top.
