  • 1 pound Chicken Tenders cut into bite-sized pieces
  • 1 cup Buttermilk or substitute with whole milk and vinegar
  • 1 teaspoon Garlic Powder or substitute with fresh minced garlic
  • 1 teaspoon Onion Powder or use fresh onion
  • 1 teaspoon Smoked Paprika regular paprika can be used
  • 1 teaspoon Salt adjust to taste
  • 1/2 teaspoon Ground Black Pepper or use white pepper
  • 1 cup Panko Breadcrumbs creates a crunchy layer
  • 1/2 cup All-purpose Flour or gluten-free flour
  • 2 large Eggs whisked, or use flaxseed mixture for vegan
  • 1 cup Avocado Oil for frying, any neutral oil works
For the Bang Bang Sauce
  • 1/2 cup Mayonnaise can substitute with Greek yogurt
  • 1/4 cup Sweet Chili Sauce store-bought or homemade
  • 1 tablespoon Sriracha adjust for spice preference
  • 1 tablespoon Honey optional, maple syrup works for vegan
  • 1 tablespoon Rice Vinegar can use apple cider vinegar

Method
 

Step-by-Step Instructions
  1. Trim and cut the chicken tenders into bite-sized pieces. Rinse and pat them dry.
  2. Combine buttermilk, garlic powder, onion powder, smoked paprika, salt, and black pepper in a bowl, then marinate chicken pieces for at least 15 minutes, ideally 2 hours.
  3. Prepare a breading station with flour, whisked eggs, and panko breadcrumbs. Bread each chicken piece in this order: flour, egg, and panko.
  4. Heat avocado oil in a skillet to 350°F. Fry the breaded chicken for 3-4 minutes per side until golden brown and crispy.
  5. Mix mayonnaise, sweet chili sauce, sriracha, optional honey, and rice vinegar for the sauce. Coat the fried chicken bites in the sauce or drizzle on top.
  6. Serve on a platter, garnished with parsley or cilantro, with extra sauce on the side.
